Eggless Tofu Salad
Tofu gets a bad rap, but it’s a great high-protein snack or meal that takes on the flavors you give it. This salad can be eaten alone, on a bed of greens, as a sandwich base, or used as a dip with raw vegetables. It’s so delicious you’ll want to double the recipe for the next day.
½ pound firm tofu, mashed with a fork
2 celery stalks, chopped
2 tbsp. vegan mayo
1 tbsp. pickle relish (sweet or dill)
1 tsp. dijon-style mustard
½ tsp. turmeric
¼ tsp. salt
Ready in 20 minutes
Combine all ingredients in a mixing bowl and mix.
Taste and adjust seasonings as needed.
This only works with firm or extra firm tofu. Other veggies can be substituted or added; try chopped bell pepper, shredded carrots, or chopped tomato.
