Overnight Steel Cut Oats
This is an easy recipe and a raw food if you don’t heat the oats. If you live in a cold climate, a warm breakfast is always comforting so a quick heating helps. You can also add a half cup of nut milk before eating, but since the oats soak up the water they’re pretty soft and deliciously chewy on their own.
1 cup steel cut oats
1-2 cups purified water for soaking
2 tablespoons walnuts
2 tablespoons dried cranberries or other fruit
1 tablespoon raw honey
½ teaspoon ground cinnamon
pinch sea salt

*The Night Previous: Soak 1 cup steel cut oats in a bowl with purified water, covering oats with one inch of water above, because oats will expand.
In the morning, pour out excess water by straining oats in a mesh sieve.
Place oats in a new bowl, add cinnamon, honey, a pinch of salt and stir together.
Add walnuts and dried fruit. Add more raw honey if desired.
If warming: Place strained steel cut oats in a small pot at low heat, just long enough to gently warm oats. Put into bowl and follow directions above.
Note: Oats are soaked overnight, so this recipe preparation begins the night before.
